Pappy’s Choice Grilled Chicken Caesar Avocado Salad

A mouthwatering classic with a twist two types of cheese plus avocado give a tasty update to a tried and true recipe


Ingredients

  • 4 boneless skinless chicken breast

  • 2 tablespoons olive oil

  • 2 teaspoons Pappy's Choice Seasoning or to taste 

  • 4 cups chopped romaine

  • 2 whole sliced avocados

  • 1pint cherry tomatoes sliced

  • 1 cup croutons

  • ½ cup shaved or shredded parmesan cheese

  • For the dressing

  • Asiago Caesar Dressing

  • 2 teaspoon Dijon Mustard

  • 2 teaspoon Worcestershire Sauce

  • 2 garlic cloves, pressed

  • ½ teaspoon Pappy's Choice Seasoning

  • ½ cup mayonnaise

  • ½ cup olive oil

  • ¾ cup asiago cheese shredded

Instructions

  • Preheat a grill to medium high heat. Rub the chicken with olive oil then sprinkle with the Pappy’s Choice Seasoning. Grill on each side 2-4 minutes depending on thickness until chicken is cooked and no longer pink. Slice the chicken and set aside.

  • In a large bowl add the chicken, romaine, avocado, cherry tomatoes, toss with dressing and top with croutons and parmesan cheese.
